I’m running Plex on a NAS (linux) with an HDHomerun Quatro tuner.
If I record, for example a half-hour show (with an extra 10min on each side) on channel 001 from 5:50 to 6:40, I can also record another 30 min show (with 10 mins extra) on that same channel from 6:20 to 7:10 using a 2nd tuner from the HDHomerun.
@taraba your HDHomerun Prime has 3 tuners, so you should not have an issue.
